Split Pea Soup

Ingredients
  

  • 1 cup dried split peas
  • 2 carrots (small, chopped)
  • 1/4 white onion (sliced)
  • 1 pinch sea salt
  • 1 pinch ground cumin
  • extra virgin olive oil
  • 6 cups water

Instructions
 

  • Bring water to a boil in a pot on the stove top.
  • Add in split peas, carrots and onion.
  • Reduce heat to medium and let simmer for 30 minutes or until peas are soft.
  • Add to blender or food processor.
  • Add sea salt and process until pureed.
  • Add more water as needed for desired consistency.
  • Serve topped with olive oil and cumin.

Notes

Recipe makes approximately 3 bowls or 750 mL.
