
Taco Soup
Course Soup
Ingredients
- 1 tbsp lean ground beef
- 1 small onion diced
- 1 ½ tsp salt
- ½ tsp pepper
- 1 tbsp cumin
- 1 tsp smoked paprika
- ½ tsp chili powder
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp oregano
- 10 oz can Rotel drained, could substitute with chiles
- 15 oz can corn drained and rinsed
- 15 oz can black beans drained and rinsed
- 3 cups low sodium beef broth
- 8 oz tomato sauce
Instructions
- In a large pot over medium-high heat, brown ground beef until cooked through.
- Add onion and saute until tender. Drain excess grease.
- Add garlic and cook until fragrant.
- Add all remaining ingredients and stir well. Bring to a simmer and cook for 20 minutes.
- Serve with optional toppings.

Optional Toppings: avocado, cheese, tortilla strips (or crushed chips), lime
