Taco Soup

Course Soup

Ingredients
  

  • 1 tbsp lean ground beef
  • 1 small onion diced
  • 1 ½ tsp salt
  • ½ tsp pepper
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp oregano
  • 10 oz can Rotel drained, could substitute with chiles
  • 15 oz can corn drained and rinsed
  • 15 oz can black beans drained and rinsed
  • 3 cups low sodium beef broth
  • 8 oz tomato sauce

Instructions
 

  • In a large pot over medium-high heat, brown ground beef until cooked through.
  • Add onion and saute until tender. Drain excess grease.
  • Add garlic and cook until fragrant.
  • Add all remaining ingredients and stir well. Bring to a simmer and cook for 20 minutes.
  • Serve with optional toppings.

Notes

Optional Toppings: avocado, cheese, tortilla strips (or crushed chips), lime
