Veggie Egg Muffins

Makes 6–8 muffins
Course Breakfast

Ingredients
  

  • 6 eggs
  • ½ cup diced bell peppers
  • ½ cup spinach
  • ¼ cup onion
  • Salt & pepper

Instructions
 

  • Preheat oven to 375°F.
  • Whisk eggs, stir in veggies.
  • Pour into greased muffin tin.
  • Bake 18–22 minutes.
