Barbecued Veggie Skewers

Ingredients
  

  • 4 cremini mushrooms (halved)
  • 1 cup red onion (chopped)
  • 1 red bell pepper (seeds removed, chopped)
  • 2 tbsp extra virgin olive oil
  • 4 barbecue skewers
  • sea salt (to taste)
  • pepper (to taste)

Instructions
 

  • Toss mushrooms, onion, and bell pepper into a a bowl with oil until well coated.
  • Pierce mushrooms, onion, and bell pepper onto barbecue skewers.
  • Season skewers with salt and pepper.
  • Grill over medium heat turning frequently until charred for about 15 minutes or until cooked through.
  • Serve on plate and enjoy!
