
Egg Roll in a Bowl

Ingredients
- 1 lb ground meat turkey, chicken, pork, or beef
- 1 tbsp sesame oil
- 1 small onion diced
- 3 cloves garlic minced
- 1 tbsp fresh ginger grated (or 1 tsp ground)
- 1 14-16 oz bag coleslaw mix (or ~5 cups shredded cabbage + carrots)
- 3 tbsp soy sauce or coconut aminos
- 1 tbsp rice vinegar
- 1-2 tsp sriracha optional
- 2 green onions sliced
- Salt & pepper to taste
Instructions
- Heat a large skillet over medium heat. Add ground meat and cook until browned, breaking it apart. Drain excess fat if needed.
- Stir in sesame oil, onion, garlic, and ginger. Cook 2–3 minutes until fragrant.
- Toss in the coleslaw mix and stir well. Cook for 5–7 minutes until softened but still slightly crisp.
- Add soy sauce, rice vinegar, and sriracha. Stir and cook another 2–3 minutes.
- Taste and adjust seasoning. Top with green onions before serving.
