
Dijon Parmesan Chicken
Ingredients
- 4 boneless skinless chicken breasts (or thighs)
- ¼ cup Dijon mustard
- 2 tbsp olive oil or melted butter
- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs panko for extra crunch
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt & pepper to taste
Instructions
- Set oven to 400°F. Lightly grease a baking dish or line with parchment.
- In a small bowl, mix Dijon mustard and olive oil.
- In another bowl, combine Parmesan, breadcrumbs, garlic powder, Italian seasoning, paprika, salt, and pepper.
- Brush each chicken piece with the Dijon mixture, then press into the Parmesan breadcrumb mixture to coat well.
- Place chicken in the dish and bake for 20–25 minutes, or until internal temp reaches 165°F and the crust is golden.
- Broil for 2–3 minutes at the end for extra crunch.
