
Lentil & Vegetable Stew
Course Soup
Ingredients
- 1 cup dried lentils
- 2 carrots chopped
- 2 celery stalks
- 1 can diced tomatoes
- 4 cups broth
- 2 cups spinach
- 2 cloves garlic
- 1 tsp cumin
Instructions
- Add everything except spinach.
- Cook low 6–8 hours.
- Stir in spinach before serving.
