
Chickpea Coconut Curry

Ingredients
- 2 cans chickpeas drained
- 1 can coconut milk
- 1 can diced tomatoes
- 2 cups spinach
- 1 tbsp curry powder
- 1 tsp garlic
Instructions
- Add everything except spinach to a slow cooker.
- Cook low 4–6 hours.
- Stir in spinach before serving.
