10 Easy Summer Recipes Under $10

It’s time for another 10 under $10 blog! Summer rolled into town and brought the heat with her. Today we are going to look at recipes that are healthy, fresh, and perfect for summertime! All recipes are under $10 to make, not per serving. Costs are estimated, and make be different based on your location.

First up, Broccoli Salad. This recipe will cost $5.75 on average. Perfect for a BBQ or picnic!

Broccoli Salad

Course Salad

Ingredients
  

  • 4 cups Broccoli Florets
  • 1 cup Shredded Cheddar Cheese
  • ¼ cup Raisins
  • 4 slices Bacon (cooked and cooled)
  • ¼ cup Walnuts (crushed)
  • ¼ cup Red Onion (diced small)
  • ½ cup Mayo
  • 2 tbsp Greek Yogurt
  • 1 tbsp White Wine Vinegar
  • ¼ tsp Sea Salt
  • ¼ tsp Black Pepper

Instructions
 

  • In a small bowl, mix mayo, yogurt, white wine vinegar, salt, and pepper. Whisk together and set aside.
  • In a large bowl, add broccoli, cheese, raisins, bacon, walnuts, and onion. Toss to mix.
  • Pour dressing over salad. Toss to coat.
  • Can be kept in the fridge for up to 5 days.

This Mixed Berry Smoothie is perfect for a quick, light breakfast or snack! This recipe serves 2 and comes in at $6.95.

Mixed Berry Smoothie

Course Drinks

Ingredients
  

  • 3 cups Frozen Berries
  • 1 Banana (frozen)
  • ½ cup Plain Greek Yogurt
  • ½ tsp Vanilla Extract
  • cups Unsweetened Almond Milk (or Skim Milk)

Instructions
 

  • Add all ingredients to a large blender.
  • Blend until smooth.

These Turkey Meatballs can be used in many ways. Add your favorite sauce and enjoy this recipe coming in at $6!

Turkey Meatballs

Course Side Dish

Ingredients
  

  • ½ cup Plain Breadcrumbs
  • 2 tbsp Grated Parmesan Cheese
  • 2 tsp Italian Seasoning
  • ¼ tsp Garlic Powder
  • ½ tsp Onion Powder
  • ¼ tsp Black Pepper
  • ½ tsp Sea Salt
  • 1 lb Ground Turkey
  • 1 Egg (large)

Instructions
 

  • Preheat oven to 400*F.
  • In a small bowl, mix breadcrumbs, Parmesan, and seasonings.
  • In a large bowl, add turkey, egg, and seasoning mix.
  • Mix by hand until evenly combined.
  • Divide mixture into 16 meatballs (about 2 tbsp each).
  • Place meatballs on a parchment lined cooking sheet.
  • Bake for 20 minutes, or until internal temperature reaches 165*F.

This next one is a sweet take on a classic, Apple Slaw. This can be used as a side, or as a topping for chicken or pork. Perfect for at home or sharing with friends and family! This recipe cost approximately $6.50.

Apple Slaw

Ingredients
  

  • cup Mayo
  • 2 tsp Dijon Mustard
  • 2 tsp Honey
  • 2 tbsp Apple Cider Vinegar
  • ¼ tsp Salt
  • tsp Black Pepper
  • 1 Cabbage (small, thinly sliced)
  • 3 Granny Smith Apples (julienned)
  • 2 Carrots (julienned)
  • 3 Green Onions (sliced)

Instructions
 

  • Mix mayo, mustard, honey, vinegar, salt, and pepper to make the dressing.
  • Make sure your veggies and apples are thinly sliced and mostly uniform.
  • In a large bowl, mix dressing into veggies and apples.
  • Refrigerate overnight, mix, then serve.

This next recipe is perfect for the grill. It’s a main dish that comes in at $9.25! Check out these sausage and veggie kebabs. 

Sausage and Veggie Kebabs

Ingredients
  

  • 14 oz Smoked Sausage
  • 1 Red Onion
  • 3 Bell Peppers (any color, a variety is more visually appealing)
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tsp Paprika
  • ½ tsp Garlic Powder
  • ¼ tsp Salt
  • ¼ tsp Fresh Cracked Pepper
  • ½ cup BBQ sauce

Instructions
 

  • Slice sausage into ½ inch thick rounds.
  • Chop onions and peppers into 1 inch sized pieces.
  • Place sausage and veggies in a large bowl. Drizzle with olive oil.
  • In a small bowl, mix the paprika, garlic powder, salt, and pepper. Sprinkle over veggie and sausage.
  • Toss to combine and evenly distribute seasonings.
  • Build kebabs, alternating between sausage and veggies.
  • Grill until slightly charred on each side. Brush BBQ sauce over each side as you turn them while cooking.

This next recipe can be used as a main entrée or as a light lunch by itself. Chicken Caesar wraps can be used in a variety of scenarios and this recipe is priced at $8.17 making it a budget-friendly option.

Chicken Caesar Wraps

Ingredients
  

For the Chicken

  • 1 Chicken Breast (large, boneless, skinless)
  • 2 tbsp Extra Virgin Olive Oil (divided)
  • 1 tbsp Grated Parmesan
  • ¼ tsp Italian Seasoning
  • ¼ tsp Garlic Powder
  • ¼ tsp Salt
  • ¼ tsp Black Pepper

For the Breadcrumbs

  • 1 tbsp Butter
  • ¼ cup Panko Crumbs
  • ¼ tsp Italian Seasoning
  • ¼ tsp Garlic Powder
  • ¼ tsp Salt
  • ¼ tsp Black Pepper

For the Wraps

  • 2 cups Romaine Lettuce (chopped)
  • 2 cups Grape Tomatoes
  • ½ cup Parmesan Cheese
  • cup Caesar Dressing (store-bought or homemade)
  • 4 Tortillas (large)

Instructions
 

  • Cut chicken into small ½ inch pieces. Place in a bowl and add 1 tbsp oil, parmesan, Italian seasoning, garlic powder, salt, and pepper. Toss until coated.
  • Heat a large skillet over medium heat. Add 1 tbsp oil. Cook chicken until cooked through, about 5-7 minutes. Set aside to cool.
  • For the breadcrumbs, add all breadcrumb ingredients to a small skillet. Cook over medium heat until breadcrumbs are golden brown, about 3 minutes. Set aside to cool.
  • Prepare lettuce and slice tomatoes in half. In a large bowl, add lettuce, tomatoes, cheese, cooled chicken, cooled breadcrumbs, and Caesar dressing. Toss until evenly mixed.
  • Divide mixture between 4 tortillas. Roll like a burrito. Serve and enjoy!

This next recipe is one of my favorites, turkey pinwheels! This recipe comes in at $9.91 and can be customized to fit your liking. They can be kept in the fridge and used all week!

Turkey Pinwheels

Course Appetizer

Ingredients
  

  • 4 oz Cream Cheese
  • 2 tbsp Sharp Cheddar (finely shredded)
  • cup Olives
  • 1 tbsp Olive Brine
  • ½ tsp Garlic Powder
  • ¼ tsp Black Pepper
  • 4 Tortillas (large)
  • 9 oz Sliced Turkey
  • 1 cup Spinach

Instructions
 

  • Mix cream cheese (soften before hand!), cheese, olives, brine, garlic powder, and pepper until well combined.
  • Spread 2-3 tbsp of cream cheese mixture on each tortilla from edge to edge.
  • Place 3-4 slices of turkey on each tortilla, staying away from the edges.
  • Place a single layer of spinach over the turkey.
  • Roll up tortillas, use the cream cheese edges to stick closed.
  • Slice into 1 inch wide pieces. Enjoy!

This butternut squash salad is perfect to mix up your salad routine! It comes in at $6.45 per recipe and can be turned into a full meal by adding protein!

Roasted Butternut Squash Salad

Ingredients
  

For the squash

  • 2 lbs Butternut Squash
  • 1 tbsp Extra Virgin Olive Oil
  • 1 pinch Salt
  • 1 pinch Pepper

For the vinaigrette

  • ¼ cup Extra Virgin Olive Oil
  • 2 tbsp Maple Syrup
  • 2 tbsp Apple Cider Vinegar
  • 1 tsp Dijon Mustard
  • ¼ tsp Garlic Powder
  • ¼ tsp Salt
  • ¼ tsp Fresh Cracked Pepper

For the salad

  • 4 cups Spring Mix Lettuce
  • ¼ cup Dried Cranberries
  • ¼ cup Pecans (chopped)
  • 1 oz Goat Cheese

Instructions
 

  • Preheat oven to 400*F. peel and slice squash, cut into ½ inch cubes.
  • Place squash on a lined baking sheet, drizzle with oil. Sprinkle a pinch of salt and pepper. Toss to coat.
  • Roast squash for 30 minutes, stir halfway through. Side aside to cool once cooked.
  • Mix all vinaigrette ingredients in a small bowl. Set aside.
  • Place spring mix in a bowl (either a large one or split between 4 single serving bowls). Add squash, cranberries, pecans, and goat cheese.
  • Add dressing and toss to coat. Enjoy!

This kale pasta salad is another twist on a classic and very cost efficient coming in at $7.88 for 6 servings! It is perfect for a BBQ or potluck!

Kale Pasta Salad

Course Salad

Ingredients
  

For the dressing

  • cup Extra Virgin Olive Oil
  • 2 tbsp Balsamic Vinegar
  • 2 tbsp Mayo
  • ½ tbsp Dijon Mustard
  • 1 clove Garlic (minced)
  • ½ tsp Dried Basil
  • ¼ tsp Sea Salt
  • ¼ tsp Fresh Cracked Pepper

For the salad

  • 8 oz Penne Pasta
  • 8 oz Kale (chopped)
  • 1 pint Grape Tomatoes
  • ½ Red Onion
  • 15 oz Canned Chickpeas (rinsed and drained)
  • ½ cup Parmesan Cheese (grated)

Instructions
 

  • Whisk together dressing ingredients until smooth and creamy. Set aside.
  • Boil pasta to al dente. Drain and cool.
  • Add kale to a large bowl. Drizzle 1/3 of the prepared dressing and massage into kale. Continue for 3-5 minutes until kale has wilted to half its volume.
  • Slice grape tomatoes in half. Thinly slice red onion.
  • Add the cooled pasta to the kale. Add the tomatoes, onions, chickpeas, and parmesan.
  • Pour the rest of the dressing over top and stir salad until well combined.
  • Add salt and pepper to taste. Serve and enjoy!

Loaded Hummus Pitas

Ingredients
  

  • ½ Cucumber
  • 1 cup Grape Tomatoes
  • ¼ cup Red Onion
  • 8 Kalamata Olives
  • 1 tbsp Chopped Parsley
  • 2 oz Feta (crumbled)
  • 4 Pitas
  • 1 cup Hummus
  • 1 pinch Salt
  • 1 pinch Black Pepper

Instructions
 

  • Dice cucumber into small pieces. Slice grape tomatoes into halves. Dive red onion.
  • Spread ¼ cup hummus on each pita. Top with cucumber, tomato, onion, salt, and pepper. Crumble feta over each pita, followed by parsley and drizzle with oil. Serve and enjoy!
